Shanxi is a province located in Northwest of China famous for its rich coal deposit and best vinegar production. Shanxi cuisine is featured by flavored noodles and Dabing (Chinese style fried flatbread). Daxiaomian (hand shaven noodles) are very popular not only with local Shanxi people, but also with people from other China areas. Vinegar is often added into noodles, dumplings or Shanxi dishes to make special flavor and sour taste.
